PUMPKIN CHOCOLATE CHIP COOKIES


One of my favorite things about fall is fresh, hot out of the oven, cinnamony/chocolately pumpkin chocolate chip cookies! This is my own perfected recipe, from years of practicing and tweaking different recipes. Everyone that eats these says they are better than Smith's Bakery pumpkin cookies, which in my book is hard to beat!

THE PERFECT PUMPKIN CHOCOLATE CHIP COOKIE
1 1/4 c sugar
3/4 c oil
2 eggs
2 3/4-3 c flour
1- 15oz. can pumpkin
2 t. baking powder
1 t. baking soda
1 tsp salt
1 TB cinnamon
1/2 TB pumpkin pie spice
1 bag (2 c) Nestle semi sweet mini chocolate chips

Mix baking soda and powder with pumpkin and set aside until it begins to bubble. Cream sugar, oil and eggs together. Add flour, pumpkin mixture, salt, cinnamon and pumpkin pie spice. Mix until well blended and no lumps then add chocolate chips. Bake at 375 for 12-14 minutes. Enjoy!!
**Most of the time I double this recipe using the large 29 oz can of pumpkin***

Silas fell asleep on the bench in the kitchen while eating his cookie. He was so tired but refused to take a nap until he had eaten his cookie all gone. I covered him with the blanket. What a funny kid!
