Sunday night we had my younger brothers Matt and Mike (and Matt's cute pregnant girlfriend Shranda, hopefully soon to be SIL) over for dinner. It was so good to see them all. They only live 45 minutes away in Alpine, UT but I only get to see them about once a month. They are all busy with their own lives, working and going to school so I understand, but I do miss them. We decided to have a fish fry and try out some of the delicious yellow-fin tuna and amberjack that Jason caught on his deep sea fishing expedition.
It was incredible. Such a mild fish flavor, soft and juicy and the recipe we used from his brother Brady was divine so I thought I'd share the love. I also tried a new homemade granola to go on a spinach-cranberry salad. It was quick, easy and delicious. The recipe is also below. LEMON-DILL FISHLather both sides of the fish with:sesame seed oil, sea salt, dried dill, lemon pepper, onion powder, dried parsley and minced garlic.Add 1 TB olive and 2 TB butter to hot skillet until melted. Add two fish filets and sear on both sides, then turn heat to med-low and grill 3-4 minutes on each side until no longer pink.GRANOLA1 1/4 c oats1/4 c coconut1/4 c sliced almonds1/4 c chopped pecans1/8 c sesame seeds1 TB apple juice1 TB brown sugar1/4 c honeyMix well and bake on cookie sheet at 350 for 12 minutes.
