It was incredible. Such a mild fish flavor, soft and juicy and the recipe we used from his brother Brady was divine so I thought I'd share the love. I also tried a new homemade granola to go on a spinach-cranberry salad. It was quick, easy and delicious. The recipe is also below.Lather both sides of the fish with:
sesame seed oil, sea salt, dried dill, lemon pepper, onion powder, dried parsley and minced garlic.
Add 1 TB olive and 2 TB butter to hot skillet until melted. Add two fish filets and sear on both sides, then turn heat to med-low and grill 3-4 minutes on each side until no longer pink.
1 1/4 c oats
1/4 c coconut
1/4 c sliced almonds
1/4 c chopped pecans
1/8 c sesame seeds
1 TB apple juice
1 TB brown sugar
1/4 c honey
Mix well and bake on cookie sheet at 350 for 12 minutes.
